Coffee Rubbed Pork Tenderloin

1.5# Pork tenderloin, trimmed of the silver skin.

For the rub I used equal parts French roast coffee, brown sugar, and chili powder
with salt and pepper to taste. Next time I would use less coffee, as the taste was
a little strong.


I sliced the tenderloin so I could take different pieces out of the oven at different
times depending on thickness.

Roast in a prehated 350 degree oven for 10-20 minutes depending on thickness.

Slice on the bias for presentation.

Served with Sprouts.
